Firecracker Chicken

Ingredients

  • 2lbs chicken
  • 1 egg
  • 1 tsp minced garlic clove
  • 1 tsp black pepper
  • 1 1/2 tsp salt
  • 6 tbsp cornstarch
  • 5 tbsp all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup red hot buffalo sauce
  • 1/4 cup honey
  • 1 tbsp white or rice vinegar
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ketchup
  • 1 tsp chili flakes
  • 1/2 tsp garlic powder
  • 1/4 tsp ground mustard
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Prep the chicken cut it into bite sized pieces
  2. Mix 1 egg, garlic, salt, pepper and add the chicken and coat well
  3. In a separate bowl, mix 6 tbsp cornstarch, 5 tbsp flour, 1 tbsp baking powder
  4. Add this to the chicken and mix until every piece is coated
  5. Let it sit 5–10 minutes (helps crispiness)
  6. Heat oil to ~350°F
  7. Fry chicken in batches (don’t overcrowd)
  8. Cook 4–5 minutes until golden and crispy
  9. Remove and set on paper towels
  10. Make the Sauce
  11. In a pan, combine: 1/4 cup buffalo sauce, 1/4 cup honey, 1–1½ tbsp brown sugar, 1 tbsp soy sauce, 1 tbsp vinegar, chili flakes ,garlic powder, ground mustard, ketchup
  12. Simmer on medium heat 2–3 minutes until slightly thick
  13. Add the fried chicken to the sauce and toss until fully coated and glossy
  14. Plate it and enjoy
