Firecracker Chicken
Simple, always good
Ingredients
- 2lbs chicken
- 1 egg
- 1 tsp minced garlic clove
- 1 tsp black pepper
- 1 1/2 tsp salt
- 6 tbsp cornstarch
- 5 tbsp all-purpose flour
- 1 tbsp baking powder
- 1/4 cup red hot buffalo sauce
- 1/4 cup honey
- 1 tbsp white or rice vinegar
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tsp ketchup
- 1 tsp chili flakes
- 1/2 tsp garlic powder
- 1/4 tsp ground mustard
- 1 tbsp sesame seeds (optional)
Instructions
- Prep the chicken cut it into bite sized pieces
- Mix 1 egg, garlic, salt, pepper and add the chicken and coat well
- In a separate bowl, mix 6 tbsp cornstarch, 5 tbsp flour, 1 tbsp baking powder
- Add this to the chicken and mix until every piece is coated
- Let it sit 5–10 minutes (helps crispiness)
- Heat oil to ~350°F
- Fry chicken in batches (don’t overcrowd)
- Cook 4–5 minutes until golden and crispy
- Remove and set on paper towels
- Make the Sauce
- In a pan, combine: 1/4 cup buffalo sauce, 1/4 cup honey, 1–1½ tbsp brown sugar, 1 tbsp soy sauce, 1 tbsp vinegar, chili flakes ,garlic powder, ground mustard, ketchup
- Simmer on medium heat 2–3 minutes until slightly thick
- Add the fried chicken to the sauce and toss until fully coated and glossy
- Plate it and enjoy
