Enchiladas

Ingredients

  • 1lb hamburger meat
  • 1 pkg of tortillas (I prefer corn in this case), but the family likes flour (or make your own)
  • 1 packet of Williams Taco Seasoning
  • 1 28oz can of red enchilada sauce
  • 1/2 white onion, minced
  • 2-3 Jalepenos (Optional)
  • 2-3 cups of Colby Jack Cheese

Instructions

  1. Preheat oven to 425
  2. Preheat the skillet to medium-high heat
  3. Brown the meat in the skillet
  4. Once the meat is browned, add in the Williams taco seasoning and 1.5 cups of the red enchilada sauce to the meat
  5. Reduce the heat to a simmer and add the onion
  6. Pour 1 cup of the enchilada sauce into the bottom of an oven-safe dish
  7. Start to stuff tortillas with the meat mixture and a small amount of cheese (add jalapenos if you want them)
  8. Roll the tortillas into the enchilada shape and add them to the pan
  9. Next, take the remaining amount of enchilada sauce and dump it on top of the enchiladas
  10. Add the desired amount of cheese on top and a jalapeƱo slice or two
  11. Back for 15-20 minutes until the cheese is fully melted and the enchiladas have a crunch
