Enchiladas
Whats not to like
Ingredients
- 1lb hamburger meat
- 1 pkg of tortillas (I prefer corn in this case), but the family likes flour (or make your own)
- 1 packet of Williams Taco Seasoning
- 1 28oz can of red enchilada sauce
- 1/2 white onion, minced
- 2-3 Jalepenos (Optional)
- 2-3 cups of Colby Jack Cheese
Instructions
- Preheat oven to 425
- Preheat the skillet to medium-high heat
- Brown the meat in the skillet
- Once the meat is browned, add in the Williams taco seasoning and 1.5 cups of the red enchilada sauce to the meat
- Reduce the heat to a simmer and add the onion
- Pour 1 cup of the enchilada sauce into the bottom of an oven-safe dish
- Start to stuff tortillas with the meat mixture and a small amount of cheese (add jalapenos if you want them)
- Roll the tortillas into the enchilada shape and add them to the pan
- Next, take the remaining amount of enchilada sauce and dump it on top of the enchiladas
- Add the desired amount of cheese on top and a jalapeƱo slice or two
- Back for 15-20 minutes until the cheese is fully melted and the enchiladas have a crunch
